i am creating several Vestiges for my campaign and some of them as they gain power have additional damage on successful hits. For example one does 1d4 slashing + 1d4 fire damage. Can the fire damage be automatically rolled when the player hits the damage dice section of the item? Or is this just something the player needs to remember when rolling the damage dice?

It cannot be automatically rolled. But if you include modifiers for both damages, the first will be rollable and the second will just be shown as a note.
