Edit: I don’t mind missing out on certain things or playing when only I am free, as long as I can still interact and join in some stuff even after it’s finished (do let me know if anything I have said really doesn’t make sense, I’m not really sure how this works)

If you're interested in asynchronous games, also check out the play-by-post forum. From the FAQ post in that forum:
Play-by-Post (or PbP) is a campaign that takes place completely on these forums. The DM will post an initial thread, usually with the campaign description, and state what they are looking for in regards of players. Then the entire campaign takes place right in the thread. Everything your character does and says will be typed out in a reply, and you can even roll dice in your reply.
If your schedule is inconsistent, but you can get generally online at least once at some point during the day to post a reply to the thread, play-by-post would probably be perfect for you. You just have to watch for recruiting threads and get a character accepted to at least one campaign. Build a couple of options on the D&D Beyond character builder and then be ready to be flexible with your character's backstory so that you can fit them into a variety of campaign worlds.
One downside is that it moves slowly (one or two posts per day from most players, so a single combat encounter will take a few days to resolve). The other problem is player attrition. In my brief experience with play-by-post, it seems like these games can take a while to find a stable group of players that will stick with it. Posting once/day is a pretty low commitment, but posting a few hundred times per year....Well, I guess people get busy IRL or get bored with the game or decide that their character isn't as fun to play as they hoped. But if you stick with it, you'll eventually find at least one party and campaign that "sticks."
For example, this campaign I'm in started with 5 players, but 3 people dropped out only 2 weeks after the campaign started. The DM recruited another 2 players, and we're stable for now with a 4-character party. There are mild spoilers for The Wild Beyond the Witchlight module, but if you want to get a sense of what these games look like, you can read the most recent encounter from the start of the Hall of Mirrors to the end of that encounter. That's was about 60 posts over 5 days with the DM and each player posting a couple of times per day.

Free to play Sunday/Monday EST (At any time for any length) but unfortunately not very flexible outside of that so I understand if that is a deal breaker.
Would day that I have an average level of experience playing. Been apart of the community since about 2015 but mostly playing off and on since than.
I am an experienced player (over 36 years), I prefer playing monk's and fighter's, but I can cover any roll or class the group may need, I am good to play any week night from Tuesday through Thursday from 7PM to 11PM EST.
