I'm a DM who is tired of scheduling issues and last-minute cancellations, and likes running one-shots.
I'm looking for a Discord where I could say something like "Level 6 one-shot today at [time], (brief description of one-shot)" and have a reasonable chance of finding enough players to be able to run a game within 2-3 hours.
If there's a Discord like this out there, please let me know!
The West Marches server I play on is like that - if you become a DM there you can run games whenever you want and open the session up for people to apply. There's a lot of people on the server - several thousand (although only a portion is active). For most sessions / quests, you get enough people applying for a full table that you get to pick and choose from - and if one drops out, there's usually another eagerly waiting to take their spot. You choose the level bracket you want to run for, and the lore of the server is very loose and basically almost any kind of situation/setting works. Players have established characters already so you don't have to worry about that either. You just have to do some paperwork at the end of the quest to give players their gold/items/whatever they earn.
I would post the name of the server but I'm not sure if that violates any rules. If you're interested feel free to DM and I can share the name/link.
I've never heard of The West Marches server. I am familiar (sort of) with Discord and Roll20. I'm still pretty new to the RPG scene. But trying to find my groove.

Man, I wish I could; but level 6 is above what I've got. I'm still fairly new and figuring out mechanics.

You could try Mythic Guilds. They have one shots and other campaigns on a regular basis and games are usually snatched up by players pretty quickly.
