Yes, unlike the normal spell duration the effect from the level 11 Way of the Open Hand ability lasts until the start of your next long rest unless you end it in one of the ways specified in the spell. It would work against any and all attackers, who would have to make the Wisdom save. If the Monk was also a spellcaster or got access to the spell in another way (Ring of Spell Storing) it would have the normal 1 minute duration.

it works against everybody who doesn't make the saving throw to bypass it. No matter how many that is.
