I chose good proficiencies for the character. From the class, athletics and acrobatics. From the haunted one background, survival (good for the background of my character) and investigation (good for my high int and detective kind of character and campaign).
I feel if I don't get stealth, I won't make full beneficial the true movement of the monk. My DM is flexible and already told me if I want to replace one of my haunted one proficiencies with stealth.
That's an RP question... do you envision your monk as super stealthy? You'll still have a decent Dex bonus, and it's not like you can't perform a hide check when untrained.. but youll miss out on the proficiency bonus.
Assuming you have a low Int and STR, the proficiency bonus is more important for investigation and Athletic checks... so it really depends on how well you value stealth. I am level 3 vanilla human. Str 12, dex 15, con 14, int 14, wis 15, cha 9. My investigation and athletic checks are quite decent with the proficiencies now.
But I do want the stealthy part a bit more now. Maybe work to gain this proficiency? We are going in the campaign to a monastery for training a bit. Maybe there...

I'd go with Acrobatics, Stealth, Survival and Investigation. And if Variant Human is allowed, Perception.
You could wait until you gain L4/8/etc and take a feat to pick it up. Skill Expert lets you pick a skill to gain proficiency in and then you can gain expertise in any skill you're proficient in. So you could pick Stealth to be proficient and then make it the one you have expertise in. It also lets you increase one ability by 1.
Taking that route you don't have to make any changes in your character. I'd take the bonus in DEX. Then, when the next chance comes around, I'd take Resilient and take a skill point in WIS. That way you'll even out both of those stats AND you'll gain proficiency in WIS saves to go with your DEX and STR checks.

I concur with taking Skill Expert. I took it at 4th level for my Wood Elf Open Hand Monk. Took proficiency in Stealth, expertise in Athletics to shore it up & rounded up my odd numbered Wisdom. This as a great choice to take and lets you bump either your Wis or Dex to an even number. Unless you want to start working on your ASIs and bump both to 16 first. If you have your heart set on 20s in both stats you will be hard pressed to do so by taking even half feats however. Though 18 in both is doable with some feats & that is not terrible at all.

Monk is a high dexterity build out of necessity, so stealth, acrobatics, and sleight of hand are all good choices.
The Urchin background gives you stealth and sleight of hand, and gives you thieves' tools proficiency as well.
