a monk is able to use their dex role instead of strength role for attack and damage does that mean you can use strength for damage?
Unarmed attacks normally use strength however monks are able to use dex instead but are not required to. So yes you can use strength if you wish.
But either way you'd use the same ability score for both the attack and the damage rolls.
Find your own truth, choose your enemies carefully, and never deal with a dragon.
"Canon" is what's factual to D&D lore. "Cannon" is what you're going to be shot with if you keep getting the word wrong.
Typically strength can be better. Depending on how your campaign goes. Magic items. Etc etc.

But. Monks have a not so easy patch in tiers 2 and 3
