my dm hates monks using anything other than quarterstaff which I think I very restricted and in my opinion, it just doesn't make sense. I understand if you think monks shouldn't use weapons no matter what but I want to know if I'm just being stubborn
It sounds like your DM hasn't watched enough old-school kung fu flicks. Besides, it's YOUR monk--if you want to be the first one in history to use a mace, (you're not,) go for it.
Running Curse of Strahd with mine and I was the one that the Blood Spear of Kavan called out to on Yester Hill. I've been using it ever since. Prior to that I was using a quarterstaff.
I have always seen monks as wielding weapons - pretty much all movie-monks do it at some point. Now they can also finally use a katana/dao/jian and go full Kensai (in a meaningfull way).
Your DM sound like they have a personal hangup about how they perceive martial artists and that they only imagine one possible type of monk as being "right". It's like saying they hate any fighter that doesn't use a "longsword and a shield" or they hate any barbarian that doesn't use a "greataxe". It's a narrow-minded and unimaginative way to think of a class. There are many different kinds of martial arts. Most use a variety of weapons to some degree or another. The monk class is one such martial artist.
Im not sure where that hangup came from because it's not what is depicted historically nor in pop culture. You don't even have to look too far beyond Pop Culture kids shows like Ninja Turtles or Power Rangers to see a variety of different weapons used even by people of the same martial arts discipline.

I think your DM needs to brush up a little. There are four primary weapons in Kung Fu: the dao (saber), gun (staff), jian (straight sword), and qiang (spear). All of those, and more, are detailed in the DMG as "wuxia weapons" I think. In fact, the DMG lists several different types of dao.
Might be a good idea to bring a copy of Xanather's and Tasha's to your next session. If that doesn't work suggest watching Jackie Chan and Jet Li movies. I homebrewed a War Fan for my monk because I love watching those in action. It's not as powerful as a staff but its fun from a RP standpoint. I think Kensai can use more than one weapon (not sure, I play Drunken Master). Also Tasha allows monks to pick up any simple weapon after a rest and use it as a monk weapon.
