I'm cookin some 8'o'clock rice for me and my mama, and i thought I'd share the recepie, give you all some comfort from a tried-and-true Doodles family recipe. DISCLAIMER: This recipie, called Tanzanian coconut rice, originates from Tanzania. The Doodles family does not originate from Tanzania. We got it from a magazine, and ever since it's been a staple in our household because it's just really yummy. It's also pretty quick and easy to make, so I hope you'll try it out!
1. Rinse and drain 2 cups of rice, basmati preferably but it's good with any rice, but brown rice messes up the texture so be warned.
2. Add rice to a medium pot or high-walled pan with:
1.5 cups water
1 cup canned unsweetened coconut milk
half a cup each of peas and diced carrots(I normally used frozen peas and carrots and those come mixed together, so a cup total if you do that)
1 tsp turmeric powder
Salt to taste (you can add other seasonings or some chicken broth if you like, it's a pretty bland recipe, but if you add broth be sure to take out some water so there's the same amount of liquids in the pot)
3. Bring it to a boil
4. Turn the heat down, cover it, and cook for around 15 minutes. While you wait you can write a text post about how to make the rice!
5. take the pan off the heat, let it stand for 5 minutes covered (that step's the hardest because it'll smell so good and you'll wanna eat it but it's worth it)
6. Take the lid off the pan and bask in that sweet, sweet, turmeric steam. Fluff the rice with a fork and enjoy!
This recipe serves 6-8 standard people, 4-6 hungry people, or one hungry fry.
