They regain half their health, cleanse all conditions (poisoned, frightened, stunned etc) gain a boost to movement speed and Sonido, gain a boost to Hierro, increases the power of Bala and Cero, gains access to Gran Rey Cero, and have their unarmed strike damage/damage die replaced by their Zanpakutō damage die, along with a slight boost to that die (increased by one dice stage, such as d8 to d10 or d10 to d12) Segunda Etapa gets a bit more, but that’s not important since Grimm wouldn’t have access to that. Oh yeah they also change in appearance, but that doesn’t change much, unless they grow a new appendage (such as Ulquiorra’s wings)*

 *Now that you’re back, I’ll explain all those terms 

Sonido: Spanish for Sound, hollow equivalent of Shunpo (Also known as Flash Step) allows the user to travel at immense speeds, ignoring difficult terrain. Can also be used to avoid/escape AEO effects

Hierro: Spanish for Iron. Reduces damage taken 

Bala: Spanish for Bullet. Allows the user to shoot a ball of reiatsu. Damage dealt is low (d4, d6 when Resurrección is active) but has long range and can be made in place of a normal attack 

Cero: Spanish for Zero. A beam of reiatsu, requiring a dexterity saving throw. More powerful than a Bala (d6, d8) when Resurrección is active) but slower, can be made in place of 3 attacks (assuming you can make 6 normally)

Gran Rey Cero: Spanish for Grand King Zero. An even more powerful version of cero, requiring the user to sacrifice a portion of their health to use (equal to user’s proficiency bonus) deals a massive amount of damage (d10) but can only be fired as a full action. Can only be used during Resurrección 

Resurrección: Spanish for Resurrection. A powerful transformation, increasing an Arrancar’s strength and speed, a long with various benefits. A second, more powerful transformation know as Segunda Etapa (Second Stage) is possible, but this has only been shown by one individual, and the requirements (or if it can even be achieved by others) is unknown
