So, I just hit level 5 on my Huge Goliath Paladin, that means Find Steed is now an option. But which one?
As said, my Goliath is huge, he is a big fellow with 20 str and 18 con, standing 8 feet tall and weighing in at 409 lbs. Currently he also has another 120 lbs of gear. So even a warhorse would be hard pressed carrying with a carrying capacity of 540 lbs
The Find Steed spell says "a warhorse, a pony, a camel, an elk, or a mastiff. (Your GM might allow other animals to be summoned as steeds.)"
So my question is just, want other animals could be considered to carry me ? Any ideas ?
Your Goliath is still a medium sized creature, ironically. So he can still ride a warhorse, camel, elk, or any other large size beast.
Edit: by weight rules, only a draft horse, war horse, or an exotic mount like an elephant could carry you, but a riding horse or camel would be so close at 480lbs that I doubt a DM would normally be a stickler over it.
When in doubt "IT'S MAGIC" fixes most problems in D&D.

How is there Zero magic involved in the SPELL find steed ? The spell says "You summon a spirit that assumes the form of an unusually intelligent, STRONG, and loyal steed,"
So I asked my GM, if we could just rule that the steed had powerfull build, like my goliath. Then it would just be a "big" large warhorse, that could carry me without problems.
If none of these options work, wait until you can cast find greater steed, which lets you expand your choice of mounts to things like pegasi, griffins, and even saber-tooth cats. I'm not sure if they would do better since I haven't looked over their stats, but it might work!

If your DM has agreed for your Goliath to be huge then Find Steed will not be able to produce an animal that your character can personally ride. Sorry.
I used Find Steed to have a Giant Owl for my Goliath (DM was up for it.) but I also plan on having my Goliath hate the concept of flying so she's just going to use it be an oversized delivery bird that sometimes yoinks comrades or objects away from the battlefield.
