Joining an existing Icewind Dale Rime of Frostmaiden campaign @ level 3, the campaign is set in an unyielding night sky so it is mostly dark, expected to level 11-14.
I think this is a great chance to get a lot of fun out of a gloom stalker, and with the rolled scores MAD multi-class should be easier

I am thinking Gloom to 4 for another feat/asi then paladin the rest of the way, this will be a long road to extra attack...
I do prefer not to go human/elf/dwarf but half-elf and hill dwarf are very attractive with their +4 starting scores for a build like this...maybe even a high-half-elf with booming blade cantrip
Can't recommend taking Gloomstalker to 5 enough. Grab that extra attack right away. If you're set on this MC, then your low charisma is workable because you shouldn't take paladin past level 4. Doubling up on extra attack is no good so getting to the powerful charisma fueled auras just isn't something this build should be entertaining. Instead, this MC seems all about building in more nova potential with smites. To that end, I would recommend ending the character with levels of sorcerer or bard for better spell slots to smite with. Could definitely be an interesting build.
Even though your stats support the build, I think fighter is the better choice if you're looking for nova on this build. Action Surge + Dread Ambush can lead to 6 attacks on the first turn, all boosted with hunter's mark. Make it an Echo Knight and you can have up to 8 thanks to unleash incarnate. Plus this gives the perfect toolkit to be a shadow stalking assassin. This leaves your spell slots free for utility like pass without trace, which is an important part of the ranger kit.

Thoughts on feats?
I'd stick with Gloomstalker to level 5 to get the extra attack.
Go half elf, and skilled expert feat to boost your dex to 18, get a proficiency and an expertise.
That gives you, an extra +1 to attacks, damage, saves, and all your dex based skills.
I'm assuming you'll use the 17 for your dex...
Problem you have with switching to paladin is that you'll want to boost your charisma, rather than wisdom. Have you thought about cleric instead?
