What languages are appropriate for certain creatures? Like if I choose beasts, would I be forced to not get a new language, or could I choose something like celestial or Sylven?
There is a RAW answer that I’ll let others comment with.
As a DM I let a ranger choose a replacement language if their chosen favored enemy doesn’t have one of their own, like undead or oozes. Some beasts do have a language of their own, though! Like giant owl is its own language. Most other abilities that give proficiencies or known languages allow you to choose something in its place if it’s moot or non existent, and I see no reason to do the same for this class feature. Rangers travel all over! Surly they learned to speak gnomish or sylvan while studying plant creatures in the mountains or oozes in the underdark.
