I'm not sure I'm clear on the languages I'm able to choose. If I pick Orcs and Goblins as my favored enemy at level 1 and choose Orcish as my language, can I pick Undead at level 6 and choose Goblin as a language? Or do I not get a choice if the language options at a certain level are tied to that levels enemy choice and Undead don't really have a language?
There are many Undead that speak several languages. From the simple skeleton to the Lich, there are many possibilities, but Abyssal seems a fitting choice if you do not know what to select as a language for the Favoured Enemy feature.

I did not know the Undead created a unique language. Things I did not study in school.

Orcus is kinda a big patron of undead. So, if you're studying up on undead, makes sense you'd study about him and his language.
