So I think this would be my second foray into multiclassing, and this time I really want to do a Guerilla Warfare specialist who is equal parts good at sneaking and stabbing as well as fighting in the foray of battle. The campaign I'm running him on is wilderness-based so Scout was the obvious choice. I chose Bugbear as the race because I just really liked the idea of it and reach seemed extremely useful for Sneak Attack and Attack of Opportunity.
My actual struggle comes from two things:
1. Balancing between Rogue and Fighter levels for optimized multiclassing (And by extent what Fighter Archetype if I go beyond 3 Levels for Fighter)
2. What style of fighting I'm going to go for: (Dual Wielding VS Ranged)
Ok every 2 levels in fighter reduces your max sneak attack by 1d6. That being said 2 attacks gives you a back up plan to sneak attack if you miss with your first shot. Personally i like Rog 14/ Ftg 6.
As for which sub class, champion gives 19 and 20 are crits, samurai gives advantage on attacks, arcane archer helps archery, battle master is always good.
Fighting style is preference based, I prefer Dueling. It works with both attacks and your attacks of opportunity, and having a free hand to hold a rope, potion, torch, etc. is very helpful. The other one that is often overlooked it defense +1 AC while wearing armor.
Being a guerrilla style person, use archery to sneak in the bushes, battle master for abilities with your bow, and skulker feat. Champion would be a good option as well.
FYI, the Bugbear "Long Limbed" ability is only for melee attacks on your turn, it wouldn't apply to opportunity attacks. You could always check with the DM to see if he will house rule that their Long Limbed ability works on opportunity attacks.
If you're going to multiclass, I recommend Battlemaster - trip attack and disarming attack and other moves sound like they fit what you want to do.
I also recommend taking a look at single classing a Fighter with the Cavalier Archetype and the Polearm master feat. If you're interested in the reach aspect, a Bugbear Cavalier with the Polearm master feat is fantastic.
Edit: Sentinel feat isn't needed if you get to level 10 as a Cavalier.

That's pretty good. I'll give it a whirl and see how it goes. Thanks for the advice.
The scout's level 17 feature is really good (potentially 2 sneak attacks per turn), but it does mean giving up the extra attack from level 5 fighter.

probably, I would just do 3-4 levels of rogue and then go full fighter.
What level does the campaign begin at, and what level does the campaign end at?
So many people talk about level 20 characters, but most D&D doesn't get played with level 20 characters.
