So if I'm doing my average damage math right, it seems to me that an assassin would be better served with going 11 levels of fighter and 4 levels of gloom stalker ranger with a great weapon (half-orc with great axe?) than more sneak attack when they have the great weapon feat ( for sharpshooter to really, add one level of war domain cleric for the bonus attack weapon attack). Am I wrong?
The most obvious way that you are wrong is that War Domain Cleric is a really poor choice. You'll want your bonus action for Hunter's Mark for an extra D6 damage to eight attacks (with action surge) during the first round of combat or for Rogue Cunning Action dash (because you can't attack if there's no one in range). The bonus action attack from the War Domain is completely unnecessary.
I'm not sure what you're comparing the Fighter 11 Ranger 4 Rogue 4 Cleric 1 to, but it's silly to think of it as a Rogue if it's a level 20 character with just 4 levels in Rogue.
Yes, getting 11 levels in Fighter and 4 levels in Ranger gives a lot of attacks in the first round of combat, and this combos very nicely with a Rogue Assassin dip if you can get a surprise round. But it's a completely different character than a Rogue. It's a Fighter with Ranger and Rogue dips. It's not a Rogue.
This is objectively awful and I really have no idea what math you're using to justify this being good. 5 levels in rogue are wasted because you're not getting sneak attack damage while using a great weapon. You're always behind on where you'd be if you just went 20 levels in fighter. The first round you do have a great nova round assuming you get surprise and hit for the automatic critical hit, but that's it. Also, that doesn't really come online until level 10 when you finally get second attack. Even then i doubt you're actually doing more damage than just straight rogue. A level 11 fighter will be doing more damage than you. A level 11 rogue will be doing more damage than you. Fast forward to when you finally get your third attack at level 16 and I think this might be the only level that you're actually better off than doing 16 rogue or 16 fighter. However, at 17 rogue you're getting death strike which makes 17 rogue the better option. And at level 20 the fighter would get another attack which makes it the better option.
At level 20 the assassin rogue is doing (on a failed save) 40d6 + weapon damage + dex mod. The level 20 GWM fighter is doing (assuming all hits which is unlikely and using GWM and action surge) does 16d6 + 80 damage + (8*Str mod). Using your build, GWM and Action surge, you're looking at 14d6 + 60 + 1d8 + (7 * str mod). That's the first round. Rounds after are 10d6 + weapon and dex for the rogue, the fighter gets another action surge round so they get that again, and your build is doing 6d6 + 30 + (3 * str). Again, completely ignoring hit chance. So let's actually look at these numbers.
Rogue Assassin first round: ~150 average damage
Rogue Assassin every round after: ~50 average damage
Fighter (all but champion) first and second round: ~185 (will be a little higher for champion because of higher critical chances)
Fighter (all but champion) every round after: ~ 92
Your build first round: ~125
Your build (all but taking champion fighter): 66
If you start accounting for hit percentages, your build falls way behind.
My guess is that when you did your math you either included sneak attack damage, didn't factor in hit percentages, were only looking at 1st round nova damage, or possibly all 3. So while this might be alright super late game, it's god awful on it's way there. If you're starting a campaign at level 16, sure go for it. Otherwise this is a terrible idea.
Those numbers ignored the cleric dip because I thought that was bad. I guess you could add about 19 to the first few rounds depending on what your wisdom modifier is.
sneak attack only works with finesse weapons and ranges weapons so it can work with sharpshooter, furthermore you only get it once per turn. sneak attack really is just to pick off smaller enemies or get solid hits in with advantage, the problem with GWM and sharp shooter is the -5 to hit witch is why sneak attack outdoes shines it in early to mid game in most areas, more so when it crits, a sneak attack crit will out damage a GWM crit as you don't double the +10 just the weapons damage. if you really want to make something hit like a truck and broken pick fighter, use your extra ASIs to pick up sharp shooter and crossbow expert, take the archery fighting style. grants now you can get +10 damage with only -3 to hit OR if you have +2 or higher weapon and +1 ammo it negates the hit penitently all together and later in end game a +3 weapon with +3 ammo totally negates it so at level 20 with all that its 4-8 attacks per round (5-9 if your using a hand crossbow with the feat) each with a +14 to hit vs the GWM version witch would be +9 to hit
