If I wanted to add an NPC Paladin for one dungeon, how would I add that to the combat tracker? Do a create new character or there a stat block in source book am missing? Thank you
Depending on desired CR, a blackguard is a creature that is basically a paladin. Some adventure books may have NPC paladins with statblocks as well, but I don’t use those so I’m not sure which (if any) to point you to
To use the encounter builder I think you would have to build the NPC as a creature and assign it a CR...the DMG has guidelines for how to do that in Chapter 9

If you are wanting it as an ally, building it as a character is the easiest way (or at least assigning it a class level).
If you want it as an enemy, making a homebrew monster stat block for it works best with the tools. If it is just a 1 off NPC for 1 encounter, you don't really need to go through so much effort and can use a stand in stat block in the tracker and narrate class features separately.
