Can you do the following with a spell like shape water?
It says you can effect 5 feet cube of water does that mean you could tweak it a bit so you slice the total volume into sections making five chunks of water that are 5*5*1 feet each and do stuff with them? Eg make a foot think ice platform that's 5f wide and 25 f long?
This would still have same total volume as the original

No. Because a shape with sides of 5x1x25 is not a cube - and the spell specifically says cube.

If a spell allows different configurations of its AoE or effect, the spell says so (you find this a lot with wall spells, less so with others)
It isn't about volume, it is about area of influence.
Think of it like reach. The spell just can't reach that far.
