I was looking at the Succubus stat block, specifically it's shapeshift ability why states it can shapechange into a humanoid form, and that it loses it's fly speed without it's wings.
Now obviously if they took the shape of a human they can't fly, but on the other hand both aarakockra & some variant tieflings are humanoid but possess wings & a fly speed.
My question is, is there anything preventing a succubus or Incubus from taking one of these forms, or the form of a typical fantasy angel, and if they do can they still fly using the shapeshifted wings?
I don’t see a problem. You are describing a situation that is partially rules-based and partially story-based. Just treat it like one of the examples you just listed and make the appearance whatever you want.
If it has wings, it can still fly. The ability does not say it loses its fly speed when it changes shape, only if it loses its wings.
I would say it can't take any angelic forms though, as those are celestials and aasimar (celestial ancestry humanoids) typically don't have permanent or even physical wings.
Well see this is the question, do shapechanging abilities have to confine to the creatures listed in the books, or could a shapeshifter willingly mix and match features from different races?
Personally I feel they should be able to shapechange into anything medium & "humanoid" in the traditional sense (not the creature type), simply because it's basically impossible to justify lore wise why they can take the form of an aarokockra & not a deva, if both have roughly the same silhouette & the deva is actually more humanoid looking than the bird is.

If that were the case, it would say so.
