I’m quite certain they are official as i just purchased four bricks and you can find them on the D&D web site and it’s the only mini without a stat block representation.
Is it possible that it is a generic mini name for a named creature in Rime of the Frost Maiden? To be fair, I don’t know a lot about minis and I don’t know if they usually include named monsters or minis with generic names in their places.
I actually don’t own RotFM, so I can’t look through the art to see, but some of the entries in the marketplace listings look like they could be be vaguely frosty and skeletal. I guess there is a skeletal frost giant.
Oh, I understand better now. But no, what I was referencing was the "#42 Fire Giant Skeleton" from the Fangs & Talons blind booster set. As I recall, the set featured a bunch of monsters from the then-current book releases, but the #42 mini wasn't featured in any of those. Nobody knew why it was there, and it had no stats available. Similar situation to this.
I would imagine that the minis were queued up at a time when Rime of the Frostmaiden was assumed to have a Skeletal Sentinel monster in it. Which is no longer the case. A cursory search (for "skeleton," "sentinel," and "guard") didn't yield any results for me. I also didn't find anything in the Wayfinder's Guide to Eberron, which I thought I might, because I saw there was a Warforged mini in the Snowbound set.
If I were you, I'd make a feature for the skeletons that resembles Sentinel without actually being Sentinel. I think some monsters have similar stuff with "not quite Sneak Attack" or "not quite Metamagic." In this case, taking away the part where it excludes other Sentinels would do a lot. I'd probably also remove the part where they attack when someone gets close. But it's just personal taste.
Sounds interesting enough. Usually melee is where you want to be with skeletons, because of their bludgeoning weakness, so this makes them a little bit harder to kill.

The Snowbound mini collection was recently released.
I am unable to find an official stat block for the "Skeletal Sentinel".
Does anyone have any info on this?

Not official minis so no official stat block would be my guess.
I would suggest reskinning one of the giant stat blocks and maybe add cold resistance or immunity.

I was thinking something similar, but not a giant.
It’s a skeleton combined with a sentinel (or vice versa).
Anyway, I think that’s the way I’m going to have to go.
I was going to suggest giant skeleton but then I looked at the mini, and it didn't look like a skeleton to me.

I suppose it is possible that it's a generic mini.
however, not all the minis in the Snowbound collection are from IWD:ROTF. Some are from GOSM, Eberron, and the Basic Rules/Monster Manual.
This is the only one without a direct tie in to anything that I can find.
Doesn't matter. Just a curiosity.

Yeah - there is a Skeletal Frost Giant in ROTFM...
But my inquiry is not about a Skeletal Frost Giant.
My inquiry is about a Skeletal Sentinel who happens to be "Medium" in size (as far as minis and Skeletons go).
So I think what I'll do is mash up "Skeleton" stats and "Sentinel" stats/facts
I think this will be the best method to achieve this particular creature's stat block.
I think it will create a fun and challenging alternative to running plain vanilla Skeletons.
