Is unarmored defense a once a day thing? and is martial arts? I play a Aarakocra monk. My DM doesn't let me fly but that's fine, the other stuff is annoying
I'm not sure I exactly follow your questions, but unarmored defense is "always on." You don't need to activate it and it's not limited in use.
As to martial arts, the base damage kicking/punching is also always on. The special martial arts abilities are limited by your ki points. So, a 2nd level monk can always use the attack action to deal 1d4 martial arts damage (and their bonus action to make an additional 1d4 martial arts attack), but their uses of flurry of blows, step of the wind, or whatever are limited by their available ki points.
The limits on abilities that aren't always on are clearly stated in the rule books. As Generic_Poster said, things like the Flurry of Blows attack can be used if you have Ki Points remaining while you always get the second unarmed attack that you get from martial arts when you take an attack action. I ignored the Flurry of Blows when I was playing a monk because it wasn't worth using a Ki Point to get a third attack most of the time.
