How do you determine the monster environments? I wanna make my own roll tables, but how does dndbeyond know the environment of the monster when it's not listed in the books?
It does not, none of the monsters without a listed environment have one marked, thing is, they basically all do, almost all monsters in sourcebooks have a table saying what environments monsters going too, only adventure books and a few outliers lack the enviroment variable.

For the monster books, yes. For the setting books, not so much. Neither in Eberron nor Wildemount display environments for the creatures to appear in.
But yeah, for monster books, yeah.
