Is it possible to reduce the size of a corpse such as a Minotaur or War horse using Enlarge/reduce to a medium size corpse then use animate dead on it to get a skeleton version?
I would say you definitely can, but you would get a regular skeleton or a regular zombie out of it. It would have to be the Dm's call, but it would not retain the power a regular Minotaur would have.
Animate dead specifies a humanoid, which is as specific type of creature. Minotaurs are monstrosities, and horses are beasts.
Resurrecting non-humanoids is something that will have to be homebrewed/homeruled by your DM. I wouldn't normally allow it, given that a warhorse skeleton is twice the normal Challenge Rating of what the spell normally creatures, and a minotaur skeleton is eight times the normal Challenge Rating. In addition, the utility and size of the creatures must also be taken into account for balance reasons.
Personally I could allow the warhorse with a level 5 casting of the spell and perhaps a material cost. I may allow one minotaur, but that's only with a 7th level Create Undead spell.
Although it's creative, I don't think you should be pursuing the enlarge/reduce for anything related to this. If the spell could sustain large creatures, it would say so - shrinking something isn't going to last forever.

It is one of the many spells found in the school of magic called npcs can do this stuff because it is cool and flavorful but players can't because it's a real pain in the butt to make fair compared to other options, or "plot magic" for short.
