You might want to ask this in the Homebrew & House Rules forum rather than the Rules & Game Mechanics forum. RAW the only interaction between a Sling, Shape Water, and Poison Spray is that Shape Water could conceivably be used to craft ammunition for the Sling.
Poison Spray must target a creature, creates a noxious gas, and has an instantaneous duration. You couldn't cast it on a container to capture the gas. If you found a victim to be the target, had them sit in a box, and trapped the victim and the gas in the box, it still wouldn't work. The gas would vanish once the effect of Poison Spray was resolved.

You make small golf balls filled with poison spray. How would you rule it?
Well. Frozen poison doesn't absorb through the skin, so... Normal sling damage.
You basically asked if hitting someone with an ice rock causes bruises, hypothermia, or hydrates them. Bruises. It does the normal bludgeoning damage.
