the boon of quick casting allows you to turn one wizard, sorcerer, or warlock spell from an action-cast spell to a bonus-action cast spell. as per the rules, this means you can't cast it as an action anymore. if I learn the spell from the cleric, druid, or paladin lists, could I then use it in both forms?
I don't think so. It just says that the spell is cast as a bonus action for you. Getting it from multiple sources doesn't make it a different spell, so the boon should apply to all of them.

the boon says "a sorcerer, wizard, or warlock spell you can cast" is why I'm wondering. for example, if I am a divine sorcerer and a cleric, cure wounds counts as a sorcerer spell for me, which means I can choose it, but at the same time, I can choose cure wounds as a cleric spell too, and now I have cure wounds as a wisdom spell and cure wounds as a charisma spell. the curiosity is that cure wounds is not a sorcerer wizard or warlock spell when I get it from the cleric list, so does it falling outside of that range make it a different spell after the effect of being altered by the boon on the sorcerer side.

That's not what the boon says. It makes no mention of class, saying only "one of your spells."
From what I can see, the Boon of Quick Casting doesn't have any class restriction on which spell you choose. I think you're getting it mixed up with the Boon of Spell Mastery.
Boon of Quick Casting
Choose one of your spells of 1st through 3rd level that has a casting time of 1 action. That spell's casting time is now 1 bonus action for you.
Boon of Spell Mastery
Choose one 1st-level sorcerer, warlock, or wizard spell that you can cast. You can now cast that spell at its lowest level without expending a spell slot.
RAW, whatever spell you choose becomes a bonus action to cast. 5e treats spells you learn from different classes as distinct from one another. If you choose to use the boon on the Cure Wounds you know as a Sorcerer, you can also choose to prepare the Cleric version with the normal casting time of one action.
RAW, the text would indicate this is a permanent change of casting time to be exclusively used as a bonus action. I don't run it that way as, frankly, bonus action spells are more restrictive than a normal action. Losing the ability to cast it normally is a total downgrade in my eyes, so me giving that to a player wouldn't feel like I'm giving them a boon. I'm not entirely sure it's RAI, but the way I interpret the boon is that it ought to function like the Quickened Spell metamagic. Having the option of casting one specific spell as a bonus action feels right mechanically and thematically.

yeah, I had them mixed up. that was my thought process as well, since I was pretty sure the spells were distinct from each other if they came from different classes, since the effect is improved or worsened by change in casting stat. my thought process was combining the quickened-casting version of cure wounds with the normal casting of it and the critical role spell driver feat to double up on healing. I was trying to beat out a 20th level Aasimar life domain cleric's healing speed. I succeeded, but this would allow me to break it even further if it worked.

I agree with Quar1on. The boon makes no mention of class lists at all, it just says "one of your spells."
