I noticed this when testing out a monk I'm building. As I leveled him from 1 to 20, I saw that his d4 damage increases to d6 at level 5, and once more to d8 at level 11. Why these levels? And does this apply to all PCs with unarmed attacks or is this Monk-specific growth?

That is "Monk-specific growth". However, all classes have big spikes in abilities at levels 5, 11, and 17. These are called the "tiers of play" and are baked into the 5E system. Some examples of other classes abilities at these levels are: Cantrips scale in power at these levels. Full spell casters get new spell levels at these levels. Martial characters get some kind of offensive or defensive pump at these levels.

It is monk specific, tied to their “martial arts” class ability and the monk table under the class description
