These rules for standard classes are explicitly stated, which means they should be made explicit for home brew classes as well. Without the “word of Matt,” there is only conjecture.
I might guess requirements of wis 13 and str 13 might be reasonable for the class (since it is somewhat paladin-like with abilities that key off of wisdom).
I might also guess that proficiency with light and medium armor, shields and martial weapons might be reasonable. Again, this is all conjecture. If you want to multi class into blood hunter, discuss these aspects with your GM.

The first prerequisites you need to look at are those of your initial class. You must fulfill the multiclass prerequisites for both the class(es) you already have levels in and the class(es) you wish to gain levels in.

And my character before is a High Elf Wizard, 2 levels in wizard, and maybe now a level in Blood Hunter since I get to gain a level in a wizard or whatever.
To multiclass Wizard & Blood Hunter, the combined ability score prerequisites are:
13+ Strength or Dexterity
13+ Wisdom
13+ Intelligence
If you meet the requirements of all three bullet points, you're good to go!

I am now at Character level 7 (Blood Hunter 5 / Ranger 2) but when I use my Blood Rite it seems to calculate the cost to my Max HP as though I was a Level 7 Blood Hunter. Is this correct? It would seem to me that you should only pay the HP cost for your levels in Blood Hunter, not your total combined levels?

When a crimson rite is activated, you suffer damage equal to your character level, and you reduce your maximum hit points by an amount equal to your character level. These lost maximum hit points return once the rite fades and cannot be restored otherwise. When a rite fades, no hit points are regained as part of the restoring of maximum hit points.
The price you pay continues to increase with your overall character level, but the benefit you get from using it only increases with your BH levels.

The variant hemocraft ability score feature lets you use wisdom instead of intelligence for blood hunter features, but it doesn't say anything about changing the multiclassing prerequisite.
Variant Hemocraft Ability Score. As a blood hunter, you use your Intelligence modifier for some of your class and subclass features. However, with your DM’s permission, you can choose to instead use your Wisdom modifier for all your blood hunter features that use your Intelligence modifier by default.
I assume this is a miss in the documentation and the Ability Score Minimum should be: "As a multiclass character, you must have at least a Strength score or Dexterity score of 13 and an Intelligence score or Wisdom score of 13 to take a level in this class, or to take a level in another class if you are already a blood hunter."
Note that Bloodhunter is homebrew, and has not gone through any kind of testing or review by the D&D development team. It's not even Third-party, even though the author is Mercer. It is pure homebrew that has not passed any filter. So if someone plays with that class, they should be very clear about that. It's exactly the same as if you use a class written by a random user in a forum.

I agree you should be right, but Beyond seems locked into the INT requirements. Really frustrating, hopefully to be fixed soon?
