I don't want to get into whether an Artificer Guardian can do two weapon fighting with each of their gauntlets, I have seen those threads, assume the DM will allow them to be used with dual wielder feat.
If I have a shield, can I use my interact with an object to swap shield hands and attack with my other thunder gauntlet?
action would be -
attack with right thunder gauntlet
and then as part of that action I would move my shield from left hand to right hand.
then bonus action would be -
attack with left thunder gauntlet
Kind of like a star spangled Marvel super hero.
Another way is:
action would be -
attack with right thunder gauntlet
and then as part of that action I drop my shield
then bonus action would be -
attack with left thunder gauntlet
pick up shield as an interact with environmental object as a free action
With the Dual Wielder feat, this would be similar to drawing a weapon (there is no restriction that drawing and stowing actions happens at the same time), and stowing a weapon.

No. Each of donning and doffing a shield requires a full action (not just "interact with object"). Normally swapping your shield from one hand to another would take two turns and prohibit normal attacks. (Would not prohibit bonus actions, though, generally.)
