I was wondering if there was a way to become permanently immune to all curses or petrification. In the campaign i'm in, any entity with an ac of over 20 is instantly turned to stone, this is especially bad for my high dex monk.
Nothing immediately comes to mind that keeps you absolutely safe from petrification, other than Artifact-level things (mentioned in the Dungeon Master's Guide). Curses are much more complicated, since they're not a condition or even a precise type. For example, Bestow Curse refers to its target as "cursed", but Hex does not, even if it states it curses the target.
Regardless, the problem seems solvable with different means, even though you don't provide enough information to make informed guesses.
Primarily, I'd investigate the campaign's lore (In Character, of course). What is this curse? What causes it? Have scholars found means to evade it? Is it even curable (with Remove Curse or the like)? Perhaps there's an item of legend somewhere hidden that waits to be found.
Failing all of the above, I'd consider it's a balancing measure from the DM to avoid shenanigans. Is the curse even resistible (does it have a save)? Or is it automatic as soon as your AC goes over 20? Does it count for static AC, or does the Wizard cast Shield only to find himself Petrified?
If active effects are not an issue, it's relatively easy to keep your AC to 20 or below without worrying that your friend's Shield of Faith will cause unintended consequences. Push comes to shove, you can even wear an armor (a leather?) to prevent your Wisdom from adding too much.
...although I find myself curious, how exactly is "below AC 20" a problem? What character level are we talking about? What items? It's not easy to go over 20 in 5th edition.
In addition to the options mentioned above, if the petrification is considered to be the effect of a spell, the Paladin's Cleansing Touch could remove it.
Greater Restoration specifically mentions "One effect that...Petrified the target" so it would seem tailor-made for this.

I will point out that a monk's Unarmored Defense cannot cause the monk's AC to exceed 20 without one or more of the following:
1. Magic such as a manual of quickness of action increasing the monk's Dex or Wis above 20.
2. Magic such as bracers of defense increasing the monk's base AC.
3. An increase to AC from some other source, such as a racial trait or a feat.
4. The DM willing it so.
