I'm curious to know what variants or equivalences have been mentioned in official products for beast stat blocks. I'm making a summoner druid and I want to know what my options are for summoning and wild shape, and also keep them for reference as a DM. The ones I know of, for example, are:
Monster Manual: Mentions using the frog stats for a toad, hawk for a falcon, panther for a jaguar, and giant goat for a buffalo, and an eagle for a young giant eagle. There's also variants, a polar bear variant to make a cave bear, a giant rat to make a diseased giant rat, two variants on giant lizard, and armor variants for the warhorse.
Volo's Guide to Monsters: Several cow variants, which I believe are statted separately in DDB
Xanathar's Guide to Everything: Mentions using panther for a leopard or cougar and deer for antelope or caribou.
Storm King's Thunder: There's a goat variant to make a sheep and a boar variant to make a pig, mentions using black bear for a young cave bear.

I'm pretty sure I saw somewhere that a seagull is a raven without the Mimicry trait, but I don't remember where either.
