I'm creating a DMPC to act as a sort of guide for a psychological/horror game that I'm planning, and if I can help it, I want to make sure that none of my players can figure out she is actually an undead puppet.

An undead under the spell Arcanist's Magic Aura would not be detected as such by the spell Detect Evil and Good or the paladin's Divine Sense feature.

Yes. The Mask option does that.
Yes this is literally the point of the spell.
An undead under the spell Arcanist's Magic Aura would not be detected as such by the spell Detect Evil and Good or the paladin's Divine Sense feature.
