Sorcerer, at night, wants to cast an illusion of herself sleeping in a cell. The jailer has dark-vision. Does an illusion like Silent Image, work in the dark against dark vision?

Yes.
Darkvision allows a creature to see in darkness but does not grant any benefit against illusions. Only physical interactions or a Investigation check will reveal the illusion, as reported in the spell description of Silent Image.

MANY THANKS. The DnD beyond spell description I found didn't have that part. Thank you!
Keep in mind that the initial act of casting the spell will likely include verbal and somatic components that the jailor could witness. The Subtle Spell metamagic could solve this. Alternatively, cast it while the jailor isn't watching. Does said jailor realize they are dealing with a sorcerer? Do they know much about magic, say, enough to be on the lookout for verbal and somatic components of spells?
Character has subtle casting feat. Jailer doesn't know she is a sorceror, thinks a thief. Jailer walks up and down casually a row of prisoners. None of the prisoners can see each other.
