Whether the soul ceases to exist or goes to the nine hells to be tortured you won't be able to play your character. Depending on your DM and the exact wording of your contract there may be gameplay consequences, for example if you die it might not be possible to resurrect you.
Depends on what your DM chooses. Maybe souls can be used to make powerful animated weapons. Or goblets that refill with wine. Or maybe they're used as currency. There are a lot of good uses.
DMs have a lot of leeway into how to interpret the forfeiting of a soul to a devil, but the baseline for "rules and mechanics" would refer to the MM, which says that such forfeited souls travel to the 9 Hells and become a creature known as a lemure. From there, the soul may be promoted based on need or merit into other devil forms, gaining power as it does so.
