Does the spell deliver the damage and thus trigger Grim Harvest?
My inkling at this point is yes because... 1. "The spell captures some of the incoming energy, lessening its effect on you and storing it for your next melee attack." The spell is responsible for storing and presumably delivering the damage. 2. The spell duration is 1 round rather than instantaneous.
...but I'd like some other thoughts or an official word. I found some related answers about Shadow Blade, but nothing directly about Absorb Elements.
I think you're right. However, I also think that it might only work if it's the extra Nd6 elemental damage that finishes off the target, because it says, "when you kill one or more creatures with a spell".
