A potion of poison looks just like a potion of healing. What would happen if it was given to an unconcious character, thinking it would resuscitate them? They would fail a death save from the initial damage, but then what
Would they have to make additional saves against the poison each turn? Even if they succeeded on each CON save against the poison, they'd keep failing death saves (due to damage each round). How would you deal with this?
It would be just as you've described, they'd take damage and fail the save. I would make it extremely apparent what has happened so the players can try to counteract the poison. If they succeed in neutralizing the poison the effect ends, if not, the player will most likely die.
A stable creature doesn't make death saving throws, even though it has 0 hit points, but it does remain unconscious. The creature stops being stable, and must start making death saving throws again, if it takes any damage. A stable creature that isn't healed regains 1 hit point after 1d4 hours.

But wouldn't a player drinking the potion become unstable as it causes damage upon drinking? I suppose the party' should only choice, then, is to keep stabilizing the poisoned creature until they stave off the poison.
