hi. The duellist fighting style gives +2 damage when you attack with no weapon in your of hand.
If I play a rogue, can I attack with one weapon and nothing in the off-hand, see if I land a hit (thus with +2 from duellist), and if I miss choose to draw my second weapon (as a 1/round free use of object) and attack with that?
you could however the duellist only kick in on your first attack in this case, as soon you draw a second weapon you lose it.

However i am bit confused why you would choose duellist instead of dual weapon fighting. duellist most time picked with sword and board. while dual weapon fighting for dual wielder which seems more like your rogue.
I suppose it depends on how lenient your DM is, but the general rule on two-weapon fighting (Player's Handbook page 195, or here), suggests that you get the bonus action to attack with a different weapon assuming you "are holding" it when you attack with your primary weapon. If you do are not holding a second weapon when you're making that first attack, no general rule allows you to make a second attack if you draw another weapon later.
You can do what you suggest with a feature such as Extra Attack, or a monk's martial arts.
Assuming your interpretation (and your DM's) allows for a two-weapon attack with a weapon drawn later, also keep in mind that both sheathing and unsheathing a weapon are item interactions, which means you can only do one "for free" along with your attack or movement - the second requires an action, so you can't really do that trick that often in the same combat.
The reason is that I almost always use my bonus action to Move/hide/disengage, so I rarely get to dual-wield effectively. After going over it I found that duellist adds quite a lot of damage when i assassinate, since I then attack a lot of times with one weapon (6 times).
If i can do what we are discussing here, I can attack once, see if it hits with bonus damage and sneak attack (my prefered result since I can then move), or I can use my second hand as an option to try to land that sneak attack :)
