For one of my campaigns I'm going to be playing a lvl 4 Ranger Horizon Walker/ lvl 5 Paladin Oath of the Watchers. I've never really done a proper multiclass before so I had a question about feat stacking. Can you stack the feats of your different classes indiscriminately?
Specifically (in a handy list for ease of reading):
Divine smite (works on an attack only costs a spell slot)
Favoured foe (works on an attack)
Planar Warrior (costs a bonus action)
I probably wouldn't use all these feats at the same time, because it's very resource intensive and planar warrior states it turns all this damage into force damage (including presumably the radiant damage of the smite), but RAW would that be allowed?
You can indeed combine these features. Neither Divine Smite nor Favored Foe require your bonus action, do you're free to use Planar Warrior. Both Divine Smite and Favored Foe trigger on an attack, and neither uses a competing resource when they do trigger.
Am I correct in making the assumption that planar warrior force damage over overrides the radiant damage of divine smite? Because it seems that's how planar warrior is written.
David is correct. For most class features, as long as you are following their requirements, can be mixed and matched as you wish. Features that have additional interactions when multi-classing, like spell casting and extra attack, are specifically called out in the multi-classing section of the PHB.
Also most class features scale based off your level in that class, not you overall character level. Exceptions to this are features based off your proficiency bonus and the progression of cantrips.

it would, as the smite damage is dealt by the attack and Planar Warrior specifies all the damage becomes force damage
