If a Way of the Four Elements monk uses Fangs of the Fire Snakes to make its unarmed do fire damage does it’s Ki-Empowered Strikes make it so that it will hit through Immunity if a Creature has Immunity or Resistance to Fire Damage?

Ki-Empowered Strikes Starting at 6th level, your unarmed strikes count as magical for the purpose of overcoming resistance and immunity to nonmagical attacks and damage.
Resistance/immunity to fire damage is always resistance/immunity to all fire damage. I don't know of a single monster that has immunity/resistance to fire damage from non-magical sources. Therefore turning the fire damage magical wouldn't change anything.
Ki-Empowered Strikes has no effect on your Elemental Disciplines anyway - because they are already considered magical to begin with.
When you choose this tradition at 3rd level, you learn magical disciplines that harness the power of the four elements.
Ki-Empowered Strikes is mainly designed to allow you to punch ghosts (for example) for full damage - because ghosts have resistance to "Bludgeoning, Piercing, and Slashing from Nonmagical Attacks".

Nope - because it's very specifically worded.
