Say, you have a character with a STR of 8, he put on Gauntlets of Ogre Power, boosting it to 19, but then he get hit by a Shadow that reduced his STR by 3. How does that calculate
Or he he didn't have the gauntlets and gt hit by several Shadows, reducing his STR to 1, so he pops a Potion of Giant's strength - would it heal the damage to his STR? Or would he still die if he's hit by a Shadow one more time?
I generally rule that a magic item that overrides natural stats will continue to do so if the natural stat changes. In your example, the gauntlets are not adding 11 to the strength score, its setting it at 19. If a different creature with a strength of 11 wore them, the gauntlets still make the score 19. Likewise someone with a Strength score of 3.
So, if your strength is reduced while you wear the gauntlets, your score is still 19, but the moment you remove them your strength would drop to your natural score minus any reductions from the Shadow.
