I asked this question in the Tiefling race page comments, but thought to ask it here as well in the hopes of getting a quicker response. So just copy/pasting here. If I get a solid answer here, will post the answer on the Tiefling page so if anyone in the future ever has the same question, the answer will be in the race page's comments.
Never played a tiefling before, so have a few questions:
I see the Infernal Legacy ability gives the Thaumaturgy cantrip at base, with Hellish Rebuke and Darkness spells given at later levels. Now I see the the other Legacy flavors offer spells as well, e.g. Baalzebul Tieflings getting Ray of Sickness and Crown of Madness. Do the two sets of spells stack? For example, if I made a Baalzebul Tiefling, would I get Thaumaturgy, Hellish Rebuke, Darkness, Ray of Sickness, AND Crown of Madness? Also, the text states "able to cast x spell once with this trait...long rest". Does that mean I am able to cast each spell that falls under the Legacy ability spells once per long rest, or only one of those spells from the Legacy ability spell list per long rest?
Each tiefling sub race is complete and stands alone. The same with other races where there are several different options. The sub race replaces the default options.
The tiefling subraces appear to be from Mordenkainen's tome of foes where it states:
SUBRACE TRAITS
If your tiefling has a subrace, choose one of the following options- whichever one corresponds to the infernal being connected to the tiefling 's family. The traits of the chosen subrace replace the tiefling's Ability Score Increase and Infernal Legacy traits given in the Player's Handbook. There is one exception: tieflings connected to Asmodeus. Those tieflings use the traits in the Player's Handbook.
1) The subrace traits from MToF REPLACE the ones in the PHB.
2) Each of the Legacy spells is specifically called out as being available at a certain level and then can be cast once each. The ability to cast the spell is restored after a long rest.
e.g.
Legacy of Maladomini: You know the thaumaturgy cantrip. When you reach 3rd level, you can cast the ray of sickness spell as a 2nd-level spell once with this trait and regain the ability to do so when you finish a long rest. When you reach 5th level, you can cast the crown of madness spell once with this trait and regain the ability to do so when you finish a long rest.
I see. And just to clarify using the Legacy of Maladomini, at 5th level I would be able to cast both Ray of Sickness AND Crown of Madness in between each long rest, correct?

yes ... you can cast ray of sickness as a second level spell and crown of madness as a third second level spell. They do not use spell slots but they can also not be cast using spell slots and they can't be upcast.
Edit: As noted by another poster, crown of madness is a second level spell and the text for the tiefling ability doesn't indicate a spell level to be used so it would be cast at its lowest level which is a second level spell.

yes ... you can cast ray of sickness as a second level spell and crown of madness as a third level spell. They do not use spell slots but they can also not be cast using spell slots and they can't be upcast.
It should be noted that the spells Tieflings gain at 3rd level are 1st level spells (hellish rebuke, ray of sickness, disguise self, charm person, disguise self (again), armor of Agathys, Tenser's floating disk, burning hands, & searing smite). The ability that Tieflings receive allows all of them that can be upcast (in boldface) to be cast as level 2 spells (and only as level 2 spells, make sure to add in the extra damage or effects). The spells gained at 5th level (darkness, crown of madness, detect thoughts, suggestion, invisibility, darkness (again), arcane lock, flame blade, and branding smite) are all 2nd level spells and can only be cast as 2nd level spells (their base descriptions). If your Tiefling manages to have the spell on their known/prepared/pact magic list, they can cast the spell either with the class features using spell slots or with the racial features (no spell slots, no upcasts, but still the once per day aside from the cantrips, thought they could still cast with the class features and spell slots after).
Subraces are unique and dont share abilities. Everything listed is everything they have- including things native to all subraces (you can see this clearly with the different dwarf subraces listing some of the same information.

Ya, I got that they were different, but was confused if the default tiefling template stuff was in addition to or an alternate to the subraces. It was clarified that it was, in fact, an alternate.
