I am new to the D&D society and first wanted to clarify that Dragonborns lose their breath attacks if you choose an alternative trait. Second having a Dragonborn fighter what type of Dragonborn would you choose. Would you keep the breath attach or do a type of alternative heritage?
Depends on whether you value having a weak breath attack in a small-ish cone or if you prefer being able to scare your opponents. I would say that the later is more all-around useful at higher levels unless your DM likes sending low hp mooks at your party.
The breath weapon isn't really anything crazy useful after the first level or so unless you are fighting constant groups of enemies that stay close together. If the plan is the keep it relatively low level, I'd recommend using one but if not, use an alternative trait.

I would choose an ancestry that deals damage in a cone to help with lots of weak enemies swarming me.
