Just curious, besides its beefy tank-a-licious Paladin - how much weight can a Dragonnel fly with?
I see a warhorse can carrier 540lbs, but I assume its harder to fly with a heavy load compared to walking on the ground with a similar amount of cargo.

I see a warhorse can carrier 540lbs, but I assume its harder to fly with a heavy load compared to walking on the ground with a similar amount of cargo.
The encumbrance rules don't, by themselves, interact with fly speeds differently than other speeds, so the Dragonnel will use the standard values. Including the optional encumbrance break-points, for an S16 Large carrier, that's 160/320/480/960 Unencumbered/Encumbered/Heavily Encumbered/[Pushing/Dragging/Lifting], and it contributes 2400 pounds to pulling a carriage, cart, chariot, sled, or wagon.
As stated above by wise posters, there are basics in the PHP and DMG that cover encumbrance and carrying capacity that are specifically left vague so as to not weigh down (pun intended) the game on mechanics over story. If its critical to your game:
Player - Ask the DM
DM - Ask yourself is it critical to the Story? If yes, make up some house rules (that preserve the action). If no, then wing it. Or if the players really want to push the limits and overburden their flying mount then attempt to fly you can always quote a famous DM out there and say "You can certainly try"
