I saw a comment on YouTube claim this, but I can't find anything verifying it. If I cast the spell, could I walk away while the homunculi craft on their own?
Obviously they wouldn't cut the time in half without you, and you'd still need to spend the gold on the supplies for whatever you're making. But they seem like they'd still be capable of doing it alone, since they have the arcana and tool proficiency (though any item needing a spell would still require you to be there to supply it). But otherwise, this spell seems no different than telling your bastion to craft it for you while you are away.
If true, it seems like a nice alternative if your DM doesn't supply much downtime. And if allowed to play a Maverick Artificer, you could avoid the 100+ GP gem dust by having it stored in a prototype and use the free cast each day (or burn a slot and swap the spell out on a short rest if you're level 15).
Not under the rules as written, no. The spirits created by this spell aren't really a creature and aren't capable of taking actions other than what's explicitly specified in the spell description, which is serving as an assistant to the caster's crafting.
