If I'm a level 8 wizard and i take 1 level in sorcerer, can I take sorcerer spells of a level for which I only have wizard spell slots?
No - you choose the spells you know and/or can prepare as if you were only single classed in each class for the level that class is.

Lowest 9: JoeltheWalrus (#312), Emmber (#12,505) and Dertinus (#20,953).
So you can know up to level 1 sorcerer spells and level 4 Wizard spells, but you can cast them using a level 5 slot.
