A 3 level dip in either would result in separate pools of die that couldn’t be used interchangeably with each subclasses features.
tbis could be good or bad depending on what preferences you actually wanted.
for example a 3 psi warrior/5 soul knife would start the day with 6 die from soul knife and 6 die from warrior. While the number of die scales with proficiency, the size of the die do not. The 6 die from the warrior would all still be 1d6s at this point, but the soul knifes die would have risen to 1d8s. If playing with physical die this would actually make them a bit easier to track as you could have the easily separated by die size and remaining uses.
3 psi warrior and 6 soul knife would increase those pools to 8 initial die each since proficiency has gone up.
it is important to be able to separate and keep track of the die pools since a soul knifes die cannot be used to fuel a psi warrior feature.

I'm not doubting that they are meant to be separate but is that actually stated somewhere?
There's very written about Psionics in a general sense - such as whether it is considered "magical" for rules purposes.
Since there's no rule in the multiclassing section saying that they combine (like there are rules about how spell slots work when multiclassing), you can only assume that they are separate pools - the alternative would be to say that since they have the same ability name, then the character has a single pool for use by both classes (since the pool size is always based on your proficiency bonus which is total-level based, not class-level based).
