No. Multiattack is its own specific action (it isn’t the Attack action) and is not available for attacks of opportunity.
[EDIT] I remembered that it’s not actually relevant that multiattack isn’t the Attack action because an AoO isn’t bound by the Attack action either; it’s always a single melee attack (which is why Extra Attack doesn’t provide any benefit for AoOs).
[EDIT again] Realized you’re not actually asking about attacks of opportunity but about the attack granted by Sentinel, but it’s still a melee weapon attack, not the Multiattack action. You can pick which melee weapon attack to make (either bite or claw), but a melee weapon attack is not multiple melee weapon attacks.
My reasoning was similar, the multi-attack replaces the attack action. That would be why it doesn't get the Extra Attack. When the situation arises to reaction attack from sentinel the attack of the bear is the multi-attack. I didn't see how that could be split in half.
You aren't "splitting the multiattack." Multiattack is not an attack, it is a full action. It is like trying to replace an attack of opportunity with a bard's countercharm, a cleric's channel divinity, or a druid's wildshape.
I'm not sure whether you've grasped the conclusion they've stated or not, but hopefully you're already on the same page. Just in case, this is what the conclusion is: you don't get to use Multiattack on a reaction. You get to use either Claw or Bite, not both.

As a reaction a melee weapon attack is allowed if a nearby target is attacked.
In a bear form the attack is listed as multi-attack. Would that be a claw and bite for AOO?

Saga is right (not always relevant, but right) on all accounts.

Thanks. I'm sure the DM will agree with you.

Thanks for clearing that up for me.
