So my player and I were discussing on her Life Domain Dwarven Cleric using a rust monster as a mount. And i was just wanting to see if that is possible to do. Or should I make the rust monster a bit larger for that to work?
Mounts are supposed to be at least one size larger than the rider, and both dwarf and monster are medium, so by RAW, it wouldn’t work. Of course, if you’re the DM, you can always choose to allow it. a rust monster has the same int as a horse, and a higher wis, so it should be at least as trainable as a horse, I’d think. Though it would be an open question as to whether it could be so well trained that it wouldn’t eat the cleric’s armor.

Well I had explained to her that she has had training with it, though enough that it won't eat her armor. she'll still have to roll to keep the rust monster fluffy from eating other people's metal stuff
Well, there's no guarantee that any specific creature can be domesticated. Also, while this isn't completely clear, hitting the rust monster with a metal object rusts the object, which suggests that the rust monster can rust metal on contact. This is a problem if the cleric wears metal armor, since it's hard to avoid some contact with your mount.

feed it enough and you’ll be fine

I can imagine one can flavor it that only the blood or antennae of the creature can cause metal rust.
Thought about that, but the rust monster can rust bludgeoning weapons which may not draw blood.
It seems only if it gets hit. But yeah. It's left pretty vague if the rust monster does this through it's own blood, or if it's a secretion.
