So let's say that I have a level 3 rogue and multi class into a ranger and that got to level 3 as well.Would I be able to pick an archetype from the ranger class even though I already picked a archetype from the rogue such as Swashbuckler.
So in theory, could I be a level 3 rogue Swashbuckler and level 3 ranger beast master? Just as an example
Yep, one subclass per class, but if take enough levels in a class that you can choose a subclass you can. Or as Jeremy Crawford likes to say, "It really means it."
The only thing you can't double up on are identical fighting styles. So if you're a ranger with Archery fighting style and you multiclass into fighter, you can't take Archery fighting style again. You'd have to pick another one, like Defense or Two-Weapon Fighting.
The handbook/expansions explicitly say when you're not allowed to do something class-related, too, so you don't have to guess.

Yes, the archetype features are the features for those levels and those classes.
