I have a Firbolg Nature Cleric/Ranger with an 18 strength. At 7'2", would he be allowed to use great clubs single handed?
Rules as Written no.
"Greatclub 2sp 1d8 bludgeoning 10 lb. Two-handed"
"TWO-WEAPON FIGHTING When you take the Attack action and attack with a light melee weapon that you're holding in one hand, you can use a bonus action to attack with a different light melee weapon that you're holding in the other hand. You don't add your ability modifier to the damage of the bonus attack, unless that modifier is negative."
A greatclub is neither one handed nor light.
A Greatclub has the two-handed property. This means that it always must be used with two hands when attacking. This means you can not be holding something in the other hand when making that attack so two weapon fighting isn't possible with two handed weapons since you need a hand holding the weapon and a free hand available to use when the attack is made.
The dual wielder feat allows you to ignore the "light" property required for dual wielding weapnons but it doesn't allow you to ignore the two-handed property.
So ... no ... it doesn't matter how big or strong your character may be ... rules as written they can't two weapon fight with two handed weapons of any kind.
P.S. It is up to your DM whether they want to allow any exceptions to the rules.
5e basically just uses the shortcut that all weapons are sized for the creature using it. So you are using a 2 handed weapon appropriate for your size (which is medium).
