I just recently started playing D&D. My question is about Chill touch against undead, specifically the part regarding disadvantage to attack rolls towards you until your next turn. Is this disadvantage only towards the caster or towards any target of the afflicted?

Best way to parse these is to read the text closely:
“If you hit an undead target, it also has disadvantage on attack rolls against you until the end of your next turn.”
You in this case always refers to the caster, and only the caster.
