I'm sure there are better ways to interrupt a ritual (as you said, breaking concentration), I was just curious if it was possible to use counterspell or not to do it. Although probably rare, I imagine a situation where the party walks in on an evil sorcerer just about to finish casting their dark ritual and counterspell is the only chance the party has at interrupting it before it finishes.

I think the issue is that the one casting the ritual is under no obligation to complete the ritual if they know its been counterspelled (if you do it like, halfway through) so they could start over, and if the counterspeller waits til the end of the ritual to counterspell it, then that's more just a waste of their time while they could've done something else to stop it at the cost of not a 3rd level spell slot.

A Dark Ritual is more likely a spell with a long casting time rather than a ritual spell.

I was merely calling it a "dark ritual" for thematic purposes. My question isn't at all related to a situation I have found myself in. Its just hypothetical

Might potentially cause the caster to waste some material components that they can't replace (especially if it's a plot-level ritual), there's applications.
As the title asks, can a character with Counterspell prepared use it to interrupt a spell which is being ritual cast by another caster?

Sure but as it would just mean they start the 10 minutes over and lose nothing else.
It might be easier to break concentration.
Itinerant Deputy Shire-reave Tomas Burrfoot - world walker, Raft-captain, speaker to his dead
Toddy Shelfungus- Rider of the Order of Ill Luck, Speaker to Friends of Friends, and Horribly big nosed
Jarl Archi of Jenisis Glade Fee- Noble Knight of the Dragonborn Goldcrest Clan, Sorcerer of the Noble Investigator;y; Knightly order of the Wolfhound
3rd level spell slot well spent.
